Gingerbread Loaf
2 ripe bananas
1 cup gluten free flour
1 cup ground oat flour
3/4 cup coconut sugar
1 teaspoon vanilla powder
1 teaspoon ginger powder
1 tablespoon fresh ginger
1 cup almond milk
1/2 cup applesauce
1/2 teaspoon salt
1/4 cup blackstrap molasses
2 tablespoons chopped caramelised ginger
1 teaspoon baking soda
1 teaspoon xantham gum
1 teaspoon apple cider vinegar
Mash banana and add to a large mixing bowl. In a blender add the milk and fresh ginger until smooth. Pour this mixture into the banana mixture add applesauce, molasses, salt and spices and mid until well combined. Add remaining ingredients and when well combined spoon into a loaf tin and bake at 350F for 45 min or until a knife comes out clean.
