Almond Butter & Blueberry Granola Bar

  • 2 cups gf old-fashioned oats 

  • 1/2 cup maple syrup

  • 1/2 cup coconut oil

  • 1/2 cup creamy almond butter

  • 2 tablespoons chia seeds or flax seeds 

  • 1/4 cup sliced almonds 

  • 1 cup frozen or fresh blueberries

  • 1/2 teaspoon sea salt 

  • ¼ teaspoon almond extract

  • 1/2 teaspoon cinnamon 

Preheat oven to 375. In a bowl add melted coconut oil, maple syrup and almond butter. Mix until well incorporated. Pour in oats, chia seeds, sliced almonds, sea salt and almond extract and mix again until well combined. Finally add in the blueberries and when well mixed place into10" non-stick baking tin. Bake for 20 minutes or until the edges are browned. Let cool completely before slicing or you will have a crumbly but still delicious bar!
