Caramelized Onion & Rosemary Potato Bread

  • 1 red onion onion

  • 3 cloves minced garlic 

  • 1 teaspoon coconut oil 

  • 2 dried chili peppers

  • 4 sprigs thyme

  • 6 medium sized red potatoes 

  • 1 cup oat flour

  • 1/2 cup non- dairy milk

  • 1/4 teaspoon pepper 

  • 1 teaspoons sea salt 

  • grated vegan cheese on top

Place potatoes in 400F oven for 40 minutes until soft. In a sauce pan fry sliced onions, garlic in coconut oil until caramelised. Add the roasted potatoes to a bowl and mash until resembles chunky mash potatoes. Add in onions, herbs, milk, oat flour and salt and pepper.  Mix until well combined. Form into a round loaf and place on baking paper lined sheet pan and bake for 30 minutes. Grate cheese on top and bake again for another 5 minutes.
