Peanut Butter Banana Bread

  • 1 cup banana puree (3 ripe medium)

  • 1/4 cup almond milk

  • 1 cup peanut butter

  • 1/3 cup maple syrup/honey

  • 2 tsp. vanilla

  • 2 flax eggs (2 tbsp. + 5 tbsp. water)

  • 1/2 tsp. salt

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1 tsp apple cider vinegar

  • 2 cups rolled oats


Preheat oven to 350F or 180C. Add flaxseed meal and water to a dish and stir. Let rest for 5 minutes to thicken. Blend oats into a flour. Add to bowl with the rest of the dry ingredients (salt, baking powder, baking soda, cinnamon). Add bananas to the blender with almond milk and apple cider vinegar. Blend well. When fully blended, add this to the flax mixture. Add maple syrup and peanut butter into this bowl and mix well. Add dry ingredients into the liquid and mix well. Makes 12 muffins or one large loaf. Top with nuts or seeds of choice! Bake for around 1 hour (20-25 minutes for muffins), or until a toothpick comes out clean.
