Garlic Thyme Hummus & Oat Crackers

Hummus

  • 1 small red onions

  • 3 cloves garlic  

  • 2 cup cooked chickpeas

  • 4 sun-dried tomatoes

  • 3 sprigs thyme

  • 1 tablespoon tahini  

  • 1 tablespoon tamari

  • 3 tablespoons chickpea water 

  • Salt and Pepper to taste 

Oat Crackers 

  • 2 cups ground gluten free oats 

  • 1 teaspoon sea salt 

  • 1/4 cup of remaining hot chickpea water or just water 

  • 1 teaspoon thyme 

  • 1/2 teaspoon paprika 

Soak chickpeas over night, rinse and then cook with water to cover until tender. Slice the onions and garlic into rough pieces (will be food processing) and fry in teaspoon of water until browned. Add all drained chickpeas (save the water) the contents of the pan as well as the rest of the ingredients  into a blender and pulse until resembles a paste - adding more of the chickpea water if needed. 

To make the crackers blend oats until a flour. Pour into a bowl add in the spices. Add 1/4 cup of the hot remaining chickpea water and mix well until it resembles a dough. Take a tablespoon off the mixture roll it in your hand and place on lines baking sheet. Press it down until it forms a thin 1/4 inch cracker. Sprinkle with more thyme if desire and bake for 15 minutes turning over half way at 400F.
