Greens Detox Soup

  • 2 tbsp coconut oil

  • 1 head of kale 

  • 1 leak

  • 2 stalks of celery

  • 2-3 small zucchinis 

  • 4 handfuls of baby spinach 

  • 1 bunch of parsley

  • 3 cloves of garlic

  • 1/2 to 1 can of full fat coconut milk

  • 2-3 cups of vegetable broth/miso broth or water

  • 1 tsp salt 

  • Lemon and olive oil to serve

Wash and slice all of the greens. Sauté the leak followed by zucchini and celery for about 5 minutes.  Add in sliced garlic and after a few more minutes add in kale and spinach. When all is nice and lightly browned add in vegetable broth and coconut milk and bring to boil. When boiled, allow to simmer for 25 minutes. Take off heat and add chopped parsley and salt. Blend in a high powered blender or use an immersion blender to puree until perfectly smooth. Add more liquid if you desire a thinner consistency! Serve with squeeze of lemon and drizzle of olive oil.
