Coconut Maple + Maca Granola

  • 3 cups unsweetened coconut flakes

  • 1 1/2 cups sprouted almonds - broken in half 

  • 1/4 cup sesame seeds

  • 3/4 cup sprouted sunflower seeds

  • 3/4 cup sprouted pumpkin seeds

  • 2 tablespoons chia seeds and/or flax seeds 

  • 3/4 teaspoon kosher salt

  • 1/2 teaspoon ground cinnamon

  • 1 tbsp maca powder  

  • Sprinkle of ground cardamom

  • 1/4 - 1/2 cup maple syrup ( depending on how sweet you like it)

  • 1/4 cup coconut oil

  • 1 teaspoon vanilla powder

  • 1/2 cup dried fruit of choice - I used raisins this time 

Preheat oven to 300F. Mix all the dry ingredients together in a large bowl. Melt coconut oil and mix in maple syrup. Add wet mixture into dry and mix well. Line a baking sheet with parchment paper. Add mixture to baking sheet in a even layer and bake for 20 minutes until lightly brown. Allow to cool, mix in dried fruit and enjoy!
